CIEH Level 2 Award in Food Safety in Catering

 

Who is this course for?
The CIEH Level 2 Award in Food Safety in Catering has been designed to address the food safety needs of the catering and hospitality sector. This qualification is also suitable for any personnel who have responsibility for Food Preparation.

What are the entry requirements?
There are no entry requirements although it is recommended that candidates are either already working within the catering industry, or planning to shortly following the course so as to maintain their knowledge.

What will I study?
The qualification covers the following topics:

  • Legislation
  • Food safety hazards
  • Temperature control
  • Refrigeration, chilling and cold holding
  • Cooking, hot holding and reheating
  • Food handling
  • Principles of safe food storage
  • Cleaning
  • Food premises and equipment

How will I be assessed?
The course is 6 hours in duration and is completed by a 30 question multiple choice paper which is marked by the awarding body CIEH.

What can I do after the course?
It is recommended that this qualification be renewed every 3 years to comply with changes in legislation and good practice. The award is both nationally and internationally recognised.
